Verdicchio dei Castelli di Jesi Classico D.O.C. – Azienda Agricola Cimarelli

In the vineyard and in the cellar

It is produced in Contrada San Francesco, a renowned wine growing area in the D.O.C. Classic of Staffolo, where the production sites and the altitude contribute significantly to the finesse and aromatic expression of the wines. Only the best and most mature grapes are harvested in low crates to leave the bunches intact, which are immediately transported to the cellar and squeezed with a pneumatic press in order to obtain only the best part of the must. Fermentation takes place at a controlled temperature in stainless steel vats. After a short period of maturation, again in stainless steel tanks, it is bottled and left to rest before being sold. A wine of remarkable freshness in its youth that becomes complex and harmonious with aging in the bottle. Serve at 12-13 ° C in full-bodied white glasses that enhance the aromatic and gustatory complexity of this Verdicchio.
