“MORELLA” Verdicchio dei Castelli di Jesi Classico Superiore DOC – Azienda Agricola Quaresima
In the vineyard
Our Cru originates in the oldest Contrada of Cupramontana, Contrada Morella, from which the winery's first bottled wine takes its name. We use grapes of our own exclusive production, which belong to vineyards between 50 and 65 years old and are located in a clayey limestone soil at 350/400 mt slv with southeastern exposure. The vineyards are classified as DOC Classico, Classico Superiore. Every work done in the vineyard, from pruning to grape harvesting, is done manually.
The average of the vineyard is 60/70 ql / ha.
In the basement
With extreme care and simplicity, the vinification of all our grapes takes place. For the Morella (as for the other types of Verdicchio), only the flower must is taken from the soft-press (membrane presses), and subsequently, thanks to the pumps, the must is passed into the stainless steel tanks where the lees are separated.
Fermentation begins at a constant temperature of 18 ° C and can vary from 20 to 30 days.
