"Due Stille" is a project created in collaboration with the Brocani company. It enhances the Staffolo terroir in all its nuances. It combines two crus: Contrada “Coste”, warmer and more structured belonging to Cimarelli and Contrada “Follonica”, fresher and more elegant belonging to Brocani.
From the strong bond of friendship between the companies comes the classic Verdicchio dei Castelli di Jesi “Due Stille” which pays homage to the Staffolo terroir, with the perfect balance between structure and elegance.
The Verdicchio dei Castelli di Jesi Classico DOC "Due Stille" by Luca Cimarelli, was born with the specific purpose of enhancing the oldest territory of the appellation, enhancing the clayey and calcareous soil of the Coste "and" Follonica "vineyards, located at about 400 meters of altitude. The grapes are selected by hand and during the September harvest, then ferment at a controlled temperature. Subsequently the wine matures on the fine lees for 12 months between steel and cement, finishing the refinement with another 12 months in the bottle. The result is an intense and complex white, with a nose of fresh almonds, citrus fruits, bread crust and hay, with delicate spicy notes in the background. Excellent with second courses of baked fish.
