“DIAMANTE” Verdicchio dei Castelli di Jesi Classico Superiore DOC – Azienda Agricola Quaresima

In the vineyard

The northernmost vineyard in the Morella Contrada is used to produce the precious Diamante, the pinnacle of the Quaresima winery's wines. The Vineyards average about 80 years old and only expert hands can care for them with natural products.
Lunar phases for pruning are still respected and every operation done in the Vineyard, is performed exclusively by hand.
After years of trial and error, it has been possible to create a wine of such class and refinement that only through the passion of the producers could be achieved.
Only the two best bunches on the mother stump are taken, and placed in wooden boxes. Our estate's Verdicchio-only grapes are situated on clayey limestone soil at 450 meters above sea level with southeastern exposure.
The vineyards are classified as DOC Classico and Classico Superiore.

In the basement

With extreme care and simplicity, the vinification of all our grapes takes place.
For Diamante (as for other types of Verdicchio), only the flower must is taken from the soft-press (membrane presses), and then, thanks to pumps, the must is passed into stainless steel tanks where the lees are separated.
At a constant temperature of 18°C fermentation begins, which can range from 20 to 30 days.
