“FILELLO” Verdicchio dei Castelli di Jesi Classico Superiore DOC – Azienda Agricola Quaresima
In the vineyard
The Filello is the name of the watercourse that borders our vineyard located in the San Michele area, ending in the Cesola River and formed in the 1700s.
The name comes from the verb Filare, which in dialect means to flow; a little river that continues to flow even during the driest years, guaranteeing our grapes the necessary nourishment.
We use grapes of our own exclusive production, which belong to vineyards that are between 50 and 65 years old and are located in calcareous clay soil at 350/400 meters slv with southeastern exposure. The vineyards are classified as DOC Classico and Classico Superiore. Every work done in the vineyard, from pruning to harvesting the grapes, is done manually.
It is harvested in the first week of September (first harvest) to ensure that olfactory freshness and pleasant citrine note on the palate.
The vineyard average is 80/90 ql/ha.
In the basement
Vinification of the grapes is done with extreme care and simplicity. For Filello, the flower must is taken from the soft press and with the help of pumps, is passed into stainless steel tanks separating it from the lees. Fermentation begins at the constant, controlled temperature of 18° and can last 20 to 30 days. At the constant temperature of 18°C, fermentation begins and can last from 20 to 30 days.
